Thai eggplants are small, green and white, and about the size of a golf ball. They are commonly used cooked in curry dishes, though they are often sliced, eaten raw and dipped in various chili pastes as well.
Thai eggplants can be found from time to time at Asian food stores and farmer's markets and online, but you can substitute them in any recipe with the normal large purple variety found in most supermarkets.
