Holy Basil gets its name from its long time use as a medicine and in religious ceremonies in India. The leaves themselves are small, green and hairy, with a smattering of purple. The stems are purple as well, and it has a slightly bitter and extremely pungent taste and odor, it's one of the strongest tasting basils.

In Thai recipes, you can substitute the large leafed Italian sweet basil if you can't find the Thai variety. It can sometimes be found in Asian food stores, farmer's markets, and you can even get it shipped online.

Black Soy Sauce, differs from regular soy sauce because of its sweet flavor. It's known by a few different names, such as Sweet Soy Sauce, Dark Soy Sauce, Thick Soy Sauce, etc. As you can guess the sauce itself is dark, thick, and tastes a little sweet. A little of this sauce goes a long way in the dishes that you prepare.
This brand is called "dragon-fly" and you will have to get this at an Asian food store, or online here.

Fish sauce, (called nam pla in Thai) is commonly used instead of salt. It is made by packing barrels full of fish and salt, aging it, and then bottling the result. The flavor is very salty and a bit fishy, and probably the most used condiment in Thailand and most of Southeast Asia. It's so widespread that you will likely be able to find it in a well stocked Supermarket, and certainly at an Asian food store, or online here.
This brand is called Tiparos and is imported from Thailand. There are many other kinds of fish sauce, but this is the brand we like.
